Hard starch is requested for rainy climates because the hard kernels are more resistant to moisture problems. Flint corn is preferred for grits and polenta, but can also be ground into cornmeal.

Most flint corns are yellow. But blue pigments (anthocyanins) have very high antioxidant value, proven to be wonderful for human health. They are anti-cancer, anti-inflammatory and anti-aging. You might as well have the antioxidant health benefits with your flint corn. At this time about 25% of the kernels have blue germs, and we increase this trait every year.

The ancestry is 50% blue Painted Mountain corn to which 20 yellow Eastern heirloom flint corns have been added. If you cross this to your local flint corn to get the health benefits of the blue color, you will be delighted to see how its genetic diversity reignites great vigor, hardiness and production in your local corn.
